  • 2 medium apples cored and sliced 1/4 inch thick
  • 1 tbsp granulated sugar free sweetener
  • 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 1 tsp avocado oil
  • 1 cup plain nonfat Greek yogurt
  • 1 tsp vanilla bean paste
  • 2 tbsp chopped pecans

Method
 

  1. Wash and dry the apples, core them, and slice into 1/4 inch thick wedges.
  2. Add apples to a bowl and toss with sugar free sweetener, cinnamon, salt, and avocado oil until evenly coated.
  3. Preheat the air fryer to 350°F for 3 minutes and lightly oil the basket if needed.
  4. Arrange apples in a single layer with space between pieces and cook for 12 minutes, shaking the basket at 6 minutes.
  5. Rest the apples in the basket for 2 minutes.
  6. Stir Greek yogurt with vanilla bean paste, divide into 4 bowls, top with warm apples, and finish with chopped pecans.

Notes

- Keep the apples in a single layer or they will steam instead of caramelize; cook in batches if needed.
- If apples turn out too firm, slice thinner next time or add 2 minutes and shake once more.
- For tighter portions and steadier blood sugar, serve with the Greek yogurt and keep toppings measured.
