Ingredients

Ingredients
  • 4 large high protein flour tortillas about 8 inches each
  • 1/2 cup shredded part skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter melted
  • 2 cloves garlic minced
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Method

  1. Preheat the air fryer to 375°F.
  2. In a small bowl, stir together the melted butter, minced garlic, garlic powder, and salt until well combined.
  3. Lay the tortillas flat on a cutting board and brush one side of each tortilla evenly with the garlic butter mixture, coating all the way to the edges.
  4. Sprinkle the shredded mozzarella evenly over the buttered side of each tortilla, then sprinkle the grated Parmesan on top.
  5. Place 1 or 2 tortillas in the air fryer basket, cheese side up, in a single layer without overlapping.
  6. Air fry for 3 to 5 minutes, until the cheese is melted and bubbly and the tortilla edges are crisp and lightly golden.
  7. Carefully remove the tortillas from the air fryer and place them on a cutting board, then immediately sprinkle with dried parsley.
  8. Repeat with the remaining tortillas, then cut each tortilla into wedges and serve hot.

Notes

- Use high protein or low carb tortillas to boost protein and reduce carbs while keeping the same method and cook time.
- For extra flavor, add a pinch of red pepper flakes or Italian seasoning over the cheese before air frying.
- Serve with warm marinara or sugar free pizza sauce for dipping if desired.
- Leftovers can be cooled, stored in an airtight container in the refrigerator for up to 2 days, and reheated in the air fryer at 350°F for 2 to 3 minutes.
