- Preheat the air fryer to 350 °F. Lightly grease the air fryer basket with nonstick spray or a thin layer of oil.
- In a medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, 1/2 teaspoon cinnamon, and salt until well combined.
- In a separate small bowl, whisk together the milk, melted butter, and vanilla bean paste or extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold with a spatula or spoon just until no dry streaks of flour remain. The batter should be thick but scoopable.
- Using a small cookie scoop or spoon, drop small mounds of batter, about 1 tablespoon each, into the greased air fryer basket, leaving a little space between each mound so air can circulate.
- Air fry at 350 °F for 8 to 10 minutes, or until the bites are lightly golden on top and a toothpick inserted in the center of one comes out clean.
- While the bites cook, stir together the remaining 1/4 cup sugar and 1 teaspoon cinnamon in a shallow bowl for the coating.
- When the bites are done, let them cool for 1 to 2 minutes until they are safe to handle but still warm, then gently roll each one in the cinnamon sugar mixture until fully coated.
- Serve warm, and enjoy immediately for the best texture.

- If the batter seems too thick to scoop, stir in 1 to 2 teaspoons of milk until it falls off the spoon in soft mounds.
