- Preheat the air fryer to 400°F for 5 minutes.
- Add the steak bites and potato pieces to a large bowl.
- Drizzle with olive oil, then sprinkle with kosher salt, black pepper, and smoked paprika. Toss until everything is evenly coated.
- Arrange the seasoned steak and potatoes in a single layer in the air fryer basket, leaving a little space between pieces. Work in batches if needed.
- Air fry at 400°F for 10 to 12 minutes, shaking the basket halfway through, until the potatoes are tender and the steak bites have browned edges.
- While the steak and potatoes cook, melt the butter in a large skillet over medium heat.
- Add the minced garlic and cook for 30 seconds, stirring, until fragrant but not browned.
- Stir in the chopped parsley, then turn off the heat and set the skillet aside.
- When the steak bites and potatoes are done, transfer them hot from the air fryer into the skillet with the garlic butter.
- Toss everything together for about 1 minute until all pieces are coated in the sauce.
- Taste and adjust seasoning with additional salt and pepper if desired, then serve immediately.

- Cut the steak and potatoes into similar-sized bite pieces so they cook at the same rate.
