  • 1 1/2 pounds boneless ribeye steaks cut into bite-sized pieces
  • 6 Yukon gold potatoes cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon smoked paprika
  • 3 tablespoons salted butter
  • 3 cloves garlic minced
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Preheat the air fryer to 400°F for 5 minutes.
  2. Add the steak bites and potato pieces to a large bowl.
  3. Drizzle with olive oil, then sprinkle with kosher salt, black pepper, and smoked paprika. Toss until everything is evenly coated.
  4. Arrange the seasoned steak and potatoes in a single layer in the air fryer basket, leaving a little space between pieces. Work in batches if needed.
  5. Air fry at 400°F for 10 to 12 minutes, shaking the basket halfway through, until the potatoes are tender and the steak bites have browned edges.
  6. While the steak and potatoes cook, melt the butter in a large skillet over medium heat.
  7. Add the minced garlic and cook for 30 seconds, stirring, until fragrant but not browned.
  8. Stir in the chopped parsley, then turn off the heat and set the skillet aside.
  9. When the steak bites and potatoes are done, transfer them hot from the air fryer into the skillet with the garlic butter.
  10. Toss everything together for about 1 minute until all pieces are coated in the sauce.
  11. Taste and adjust seasoning with additional salt and pepper if desired, then serve immediately.

Notes

- Cut the steak and potatoes into similar-sized bite pieces so they cook at the same rate.
- Keep the air fryer basket in a single layer and cook in batches to avoid steaming and keep edges crispy.
- For meal prep, cool leftovers in a single layer, then refrigerate in shallow airtight containers for up to 4 days. Reheat in the air fryer at 380°F for 4 to 6 minutes.
