Ingredients

Marinade
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 lemon juiced and zested
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
Garnish
  • Fresh parsley chopped (for garnish)

Method

Preparation
  1. In a bowl, mix together the lemon juice, lemon zest, olive oil, garlic powder, onion powder, paprika, plus salt and pepper until it looks like a loose, glossy seasoning paste.
  2. Add the bite-sized chicken pieces and toss until every piece is well covered with the marinade.
  3. Let the chicken marinate for at least 15 minutes to allow the flavors to sink in.
Cooking
  1. Preheat the air fryer to 400°F (200°C).
  2. Arrange the chicken bites in the basket in a single layer for even cooking.
  3. Air fry for 10–12 minutes, shaking the basket halfway through to ensure even browning.
  4. Check that the chicken is cooked through and has lightly crisp, browned spots before serving.
Serving
  1. Transfer the cooked chicken bites to a plate, sprinkle with chopped fresh parsley, and serve hot.

Notes

For best results, cut the chicken evenly for consistent cooking. Don't skip the lemon zest for maximum flavor. Avoid overcrowding the air fryer basket to achieve a golden brown finish.
