- Wash the potatoes thoroughly, then cut into even wedges if using regular potatoes. Pat the potatoes very dry with a clean kitchen towel or paper towels.
- Place the dried potato wedges in a large bowl. Drizzle with olive oil and toss until all pieces are evenly coated.
- Add the smoked paprika, garlic powder, onion powder, salt, and black pepper to the bowl. Toss again until the seasoning coats all sides of the potatoes.
- Preheat the air fryer to 400°F for 3 to 5 minutes.
- Arrange the seasoned potatoes in the air fryer basket in a single layer with a little space between pieces. Cook in batches if needed to avoid crowding.
- Air fry at 400°F for 15 minutes. Remove the basket and shake well or flip the potatoes with tongs to expose any browned undersides.
- Return the basket to the air fryer and cook for 8 to 10 more minutes, until the potatoes are deep golden on the edges and tender when pierced with a fork.
- Transfer the hot potatoes to a serving plate and garnish with chopped parsley or chives. Serve immediately.
