  • 2 cans 5 ounces each salmon, drained and flaked
  • 1/2 cup plain breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Cooking spray or oil spray for the basket and patties

Method
 

  1. Preheat the air fryer to 390°F while you prepare the salmon mixture.
  2. In a medium mixing bowl, combine the drained, flaked salmon, breadcrumbs, chopped onion, egg, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  3. Mix gently with a fork or clean hands until the ingredients are evenly combined and the mixture holds together without being wet or crumbly.
  4. Divide the mixture into 4 equal portions for main dish size patties.
  5. Lightly oil your hands and shape each portion into a firm, even patty about 1/2 inch thick, pressing the edges so they are smooth and do not crack.
  6. Spray the air fryer basket with cooking spray, then arrange the patties in a single layer in the basket, leaving space between each patty.
  7. Lightly spray the tops of the patties with cooking spray to help them brown.
  8. Air fry the salmon patties at 390°F for 10 to 12 minutes, flipping once halfway through, until the edges are crisp and the centers feel set when pressed gently with a spatula.
  9. Let the patties rest in the basket for 2 to 3 minutes, then serve hot with your favorite sides, on buns, or over salad.

Notes

- If the mixture feels too loose to form patties, add 1 tablespoon breadcrumbs and mix again until it holds together.
- If the mixture seems dry or crumbly, add 1 teaspoon mayonnaise and mix until it just comes together.
- Do not crowd the air fryer basket; cook in batches if needed so the patties crisp evenly.
- You can shape the patties up to 1 day ahead and refrigerate; air fry straight from the fridge and add 1 to 2 minutes of cook time if needed.
- Reheat leftover patties in the air fryer at 350°F for 4 to 6 minutes, flipping once.
