Preparation
- Remove the side muscle from each scallop.
- Dry the scallops thoroughly with paper towels until they feel tacky.
- Preheat the air fryer to 400°F (200°C) for at least 5 minutes.
- In a bowl, toss the dry scallops with avocado oil, sea salt, and black pepper until evenly coated.
- Arrange the scallops in the air fryer basket, ensuring they are at least ½ inch apart.
Cooking
- Air fry the scallops at 400°F (200°C) for 3 minutes.
- While they cook, whisk together melted butter, minced garlic, and smoked paprika.
- After 3 minutes, quickly brush or spoon half the garlic butter over the scallops.
- Continue to cook for another 2-3 minutes until the edges are golden brown and the centers are opaque.
Serving
- Remove scallops from the air fryer immediately and drizzle with the remaining garlic butter.
- Sprinkle with chopped parsley and serve with lemon wedges.
