Ingredients
  

Spring Roll Filling
  • 1 cup ground pork (or chicken, shrimp, or tofu)
  • 1 cup finely chopped carrots
  • 1 cup finely chopped cabbage
  • 1/2 cup finely chopped bell peppers
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce (low sodium if desired)
Other Ingredients
  • 10 pieces spring roll wrappers
  • as needed cooking spray for air frying

Method
 

Preparation
  1. Set a skillet over medium heat. Add the ground pork (or your chosen protein) with the minced garlic and minced ginger. Cook until the meat is browned and no longer looks raw.
  2. Add the finely chopped carrots, cabbage, and bell peppers to the skillet. Stir-fry for about 5 minutes until the veggies soften slightly and everything looks evenly mixed.
  3. Stir in the soy sauce. Take the pan off the heat and let the filling cool slightly before rolling.
Rolling and Cooking
  1. Lay a spring roll wrapper flat. Add a portion of filling and roll it up snugly.
  2. Preheat the air fryer to 375°F (190°C).
  3. Spray the air fryer basket with cooking spray. Arrange the spring rolls in the basket and air fry for 10-15 minutes, flipping halfway through.
  4. Serve warm with a dipping sauce on the side.

Notes

For best results, let the filling cool slightly before rolling, and don't overcrowd the air fryer basket. Flip the rolls halfway for even browning.
