Ingredients
  

Sweet Potato Rounds
  • 2 medium sweet potatoes (about 1 to 1 1/4 lb total), scrubbed Try to keep each slice the same thickness.
  • 1.5 tablespoons olive oil Light coating for crisping.
  • 0.5 teaspoon fine sea salt Adjust to taste.
  • 0.5 teaspoon smoked paprika Adds a warm, savory flavor.
  • 0.25 teaspoon garlic powder Enhances the savory profile.
  • 0.125 teaspoon black pepper For added seasoning.
Herbed Greek Yogurt
  • 0.5 cup plain Greek yogurt Provides a creamy dipping sauce.
  • 1 teaspoon lemon juice Brightens the flavor.
  • 1 tablespoon finely chopped fresh parsley or chives Brightens the dish.
  • Optional: flaky sea salt for finishing Sprinkle on before serving.

Method
 

Preparation
  1. Slice the sweet potatoes into rounds about 1/4 inch thick.
  2. In a large bowl, toss the rounds with olive oil, fine sea salt, smoked paprika, garlic powder, and black pepper until each slice is lightly and evenly coated.
Cooking
  1. Preheat the air fryer to 400°F.
  2. Arrange the sweet potato rounds in a single layer in the basket with space between pieces.
  3. Air fry at 400°F for 6–8 minutes. Check for golden edges, flip each round, and continue cooking for another 4–6 minutes.
  4. Transfer finished rounds to a plate in a single layer to keep them crispy.
Serving
  1. While the rounds are cooking, stir together the Greek yogurt, lemon juice, and chopped parsley or chives.
  2. Serve warm with the herbed yogurt alongside.

Notes

Store any leftovers in an airtight container. Reheat in the air fryer to restore crispness. Avoid microwaving to retain crunch.
