Vegetables
  • 1 lb Baby potatoes Cut into bite-sized pieces.
  • 2 cups Broccoli Chopped into bite-size florets.
  • 2 medium Bell peppers Chopped into chunks.
Seasonings
  • 2 tbsp Olive oil Helps seasoning stick.
  • 1 tbsp Smoked paprika Adds smoky flavor.
  • 1 tsp Salt To taste.
  • 1 tsp Black pepper Adjust according to preference.

Preparation
  1. Preheat the air fryer to 425°F (220°C).
  2. Wash and chop the vegetables into bite-sized pieces (even-sizes for potatoes and florets for broccoli).
Tossing and Arranging
  1. In a large bowl, add the potatoes, broccoli, and bell peppers.
  2. Drizzle with olive oil, then add smoked paprika, salt, and pepper. Toss until evenly coated.
  3. Arrange the vegetables in the air fryer basket in an even layer, avoiding overcrowding.
Cooking
  1. Air fry for 20–25 minutes, shaking the basket halfway through for even browning.
  2. Check for doneness: potatoes should be fork-tender with crisp edges, broccoli should have browned tips, and bell peppers should be softened.
Serving
  1. Serve warm, best enjoyed right away.

Notes

For optimal results, cut potatoes first and match other veggies to their size. Don’t skip the shaking halfway through cooking. Reheat leftovers in the air fryer for best texture.
