Ingredients
  

For the Salmon Bites
  • 1 pound salmon fillets Cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • Salt salt to taste
  • Pepper pepper to taste
  • Olive oil olive oil for cooking Lightly coat for crispiness
For the Rice and Vegetables
  • 1 cup rice Cook according to package instructions
  • 2 cups mixed fresh vegetables Like bell peppers, cucumber, and carrots
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey

Method
 

Preparation
  1. Cook the rice according to the package instructions.
  2. While the rice cooks, cut the salmon fillets into bite-sized pieces and season with garlic powder, salt, and pepper.
Cooking the Salmon
  1. Lightly coat the salmon pieces with olive oil and place in the air fryer, ensuring they are not overlapping.
  2. Air fry the salmon until golden and crisp, about 8-10 minutes, checking for doneness.
Making the Sauce
  1. In a small bowl, mix together mayonnaise, Sriracha, and honey until smooth.
Combining and Serving
  1. Toss the cooked salmon bites with the Bang Bang sauce.
  2. Assemble the bowls by adding a scoop of rice, topped with the sauced salmon and fresh vegetables.
  3. Serve immediately while warm.

Notes

For added spice, you can increase the Sriracha. If making ahead, keep vegetables separate until ready to eat for optimal crunch.
