Preparation
  1. Preheat the oven to 400°F (200°C) to ensure the bites start browning immediately.
  2. In a large bowl, combine the mashed potatoes, shredded cheese, breadcrumbs, eggs, green onions (if using), salt, and pepper. Mix until uniform with no streaks of egg or dry breadcrumbs.
  3. Scoop and roll the mixture into small bite-sized balls. Lightly oil your hands if the mixture is sticky.
  4. Grease a baking sheet with cooking spray or oil. Arrange the balls on the sheet, leaving space between each for even cooking.
Baking
  1. Bake for 20–25 minutes until the bites are golden brown and set, without any wet appearance.
  2. Serve warm for the best texture, as the edges will be crisp and the cheese melty.
