Preparation of Cherry Syrup
- In a medium saucepan, combine the pitted cherries, granulated sugar, and 1 cup of water. Bring to a simmer over medium heat, stirring occasionally.
- Cook for about 15-20 minutes, or until the cherries soften and release their juices.
- Remove the saucepan from heat and let the syrup steep for 20 minutes.
- Strain the cherry syrup into a large pitcher, discarding solid cherry pieces.
- Add the freshly squeezed lime juice to the syrup and stir to combine.
- Pour in 3 cups of cold water to adjust sweetness to liking and mix well. Chill in the refrigerator.
Serving
- Pour the cherry limeade over ice in glasses.
- Garnish with fresh mint leaves and lime slices.
Notes
For best results, use ripe cherries and adjust the water to your taste preference. A splash of lime soda can add a fizzy lift just before serving.
