Ingredients
  

Cherry Syrup
  • 2 cups fresh cherries, washed & pitted Ripe, sweet cherries enhance flavor
  • 1 cup granulated sugar Adjust sweetness to taste
  • 1 cup water Used to cook cherries
  • 1.5 cups fresh lime juice Freshly squeezed for best flavor
  • 3 cups cold water Adjust for desired sweetness
  • 3-4 cups ice For serving
  • 2-3 cups Sprite (or other lemon-lime soda) Optional for extra fizziness
  • to taste fresh mint leaves For garnish
  • to taste lime slices For garnish

Method
 

Preparation of Cherry Syrup
  1. In a medium saucepan, combine the pitted cherries, granulated sugar, and 1 cup of water. Bring to a simmer over medium heat, stirring occasionally.
  2. Cook for about 15-20 minutes, or until the cherries soften and release their juices.
  3. Remove the saucepan from heat and let the syrup steep for 20 minutes.
  4. Strain the cherry syrup into a large pitcher, discarding solid cherry pieces.
  5. Add the freshly squeezed lime juice to the syrup and stir to combine.
  6. Pour in 3 cups of cold water to adjust sweetness to liking and mix well. Chill in the refrigerator.
Serving
  1. Pour the cherry limeade over ice in glasses.
  2. Garnish with fresh mint leaves and lime slices.

Notes

For best results, use ripe cherries and adjust the water to your taste preference. A splash of lime soda can add a fizzy lift just before serving.
