Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the mashed bananas, egg, and vanilla extract to the butter mixture; mix until smooth and well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until evenly mixed.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to over-mix.
  6. Fold in your choice of chopped nuts or chocolate chips, if using.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are golden and the centers remain soft.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
