Preparation
  1. In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and sugar until evenly combined.
  2. In a separate bowl, mix the milk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.
  3. Flip the pancakes and cook for an additional 2 minutes, or until they’re puffed and cooked through.
  4. Remove from the skillet and repeat with the remaining batter, keeping finished pancakes warm in a low oven if desired.
  5. Drizzle with chocolate sauce just before serving.

Notes

For best results: Don’t overmix the batter to avoid dense pancakes. Keep pancakes warm in the oven until ready to serve, and experiment with flavors by adding vanilla extract or a pinch of cinnamon.
