Preparation
- In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and sugar until evenly combined.
- In a separate bowl, mix the milk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy.
Cooking
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.
- Flip the pancakes and cook for an additional 2 minutes, or until they’re puffed and cooked through.
- Remove from the skillet and repeat with the remaining batter, keeping finished pancakes warm in a low oven if desired.
- Drizzle with chocolate sauce just before serving.
Notes
For best results: Don’t overmix the batter to avoid dense pancakes. Keep pancakes warm in the oven until ready to serve, and experiment with flavors by adding vanilla extract or a pinch of cinnamon.
