Muffin Batter
  • 2 cups all-purpose flour Provides structure

Crumble Topping
  • 1/4 cup brown sugar Adds sweetness to topping
  • 1/4 cup rolled oats For texture

Method
 

Preparation
  1. Preheat your air fryer to 375°F (190°C). Prepare a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until combined.
  3. In a separate bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently. It’s fine if there are a few lumps in the batter.
  5. In a small bowl, prepare the crumble topping by mixing brown sugar, rolled oats, and cinnamon.
Baking
  1. Fill each muffin cup about two-thirds full with batter and generously sprinkle the crumble mixture on top.
  2. Place the muffin tin in the air fryer and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Once done, let the muffins cool in the tin for a few minutes before moving them to a wire rack to cool completely.

Notes

To keep your muffins fresh, store them in an airtight container at room temperature for up to three days. If you wish to freeze them, wrap each muffin individually in plastic wrap and place them in a freezer bag for up to three months.
