Preparation
- Preheat your air fryer to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
- Add the egg, vanilla extract, and buttermilk to the butter mixture, and beat until smooth.
- Gradually blend the dry ingredients into the wet ingredients until no flour streaks remain.
- Divide the dough into two equal parts; color one half with blue gel food coloring and the other with pink.
- Using a cookie scoop, take portions of both colors and compress them together to create a marbled effect.
- Place the cookie dough balls onto parchment-lined baking sheets, spaced apart.
Cooking
- Air fry the cookies for 10-12 minutes or until the edges are lightly golden.
- Cool on baking sheets for a few minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm for the best texture. For variations, consider adding sea salt or chocolate chips. Store in an airtight container at room temperature for up to a week.
