Method
- Preheat the air fryer to 400°F.
- Pat the zucchini sticks dry with paper towels to remove excess moisture.
- In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and black pepper.
- Place the beaten eggs in a separate shallow bowl.
- Dip a few zucchini sticks at a time into the eggs, letting excess drip off.
- Transfer the egg coated zucchini to the Parmesan breadcrumb mixture and roll to coat on all sides, pressing gently so the coating sticks.
- Arrange the coated zucchini fries in a single layer in the air fryer basket, leaving a little space between each piece.
- Lightly spray the tops of the fries with cooking spray.
- Air fry at 400°F for 8 to 10 minutes, flipping the fries halfway through cooking, until golden and crispy and the zucchini is tender.
- Remove from the air fryer and serve hot with your favorite dipping sauce.

- Keep the fries in a single layer in the air fryer basket for maximum crispiness; cook in batches if needed.
- For extra color and crunch, give the fries a light additional mist of cooking spray after flipping.
