  • 2 medium zucchinis cut into fry-shaped sticks
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs beaten
  • Cooking spray

Method
 

  1. Preheat the air fryer to 400°F.
  2. Pat the zucchini sticks dry with paper towels to remove excess moisture.
  3. In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and black pepper.
  4. Place the beaten eggs in a separate shallow bowl.
  5. Dip a few zucchini sticks at a time into the eggs, letting excess drip off.
  6. Transfer the egg coated zucchini to the Parmesan breadcrumb mixture and roll to coat on all sides, pressing gently so the coating sticks.
  7. Arrange the coated zucchini fries in a single layer in the air fryer basket, leaving a little space between each piece.
  8. Lightly spray the tops of the fries with cooking spray.
  9. Air fry at 400°F for 8 to 10 minutes, flipping the fries halfway through cooking, until golden and crispy and the zucchini is tender.
  10. Remove from the air fryer and serve hot with your favorite dipping sauce.

Notes

- Keep the fries in a single layer in the air fryer basket for maximum crispiness; cook in batches if needed.
- For extra color and crunch, give the fries a light additional mist of cooking spray after flipping.
- Serve with marinara, ranch, or a spicy yogurt dip for more flavor.
- Leftover fries can be reheated in the air fryer at 375°F for 3 to 5 minutes until hot and crisp.
