  1. Preheat the air fryer to 400 °F for 3 to 5 minutes.
  2. Peel the potatoes or leave the skins on, then cut them into even wedges or small cubes about 3/4 inch thick.
  3. Pat the potato pieces very dry with a clean kitchen towel to remove surface moisture.
  4. Place the potatoes in a mixing bowl and add the olive oil, salt, and garlic powder.
  5. Toss until all potato pieces are evenly coated with the seasoning and oil.
  6. Arrange the potatoes in a single layer in the air fryer basket, leaving a little space between pieces.
  7. Air fry at 400 °F for 20 minutes, shaking the basket halfway through cooking.
  8. Check for doneness; the potatoes should have golden brown edges and be fork tender in the center.
  9. If needed, air fry for an additional 2 to 3 minutes until the desired crispiness is reached.
  10. Serve hot as a simple main or side dish.
