Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchini into thin fry-shaped strips.
  3. In a bowl, stir together breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper.
  4. In a second bowl, beat the eggs until well combined.
Coating
  1. Dip each zucchini strip into the beaten egg, then press into the breadcrumb mixture until well-coated.
  2. Place coated zucchini fries in a single layer in the air fryer basket and lightly spray with olive oil.
Cooking
  1. Air fry for 10-15 minutes, shaking the basket halfway through for even cooking.
  2. They are done when the coating is golden and crisp and the zucchini inside is tender.
