Ingredients
  

Vegetables
  • 1 pound carrots, peeled and cut into equal-sized sticks
  • 1 pound green beans, trimmed
Seasonings
  • 3 tablespoons olive oil Helps in crisping and adds richness
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme Can substitute with fresh thyme, chopped
  • 1 tablespoon balsamic vinegar Optional, for finishing

  • to taste grated Parmesan cheese Optional, for serving

Method
 

Preparation
  1. Preheat your air fryer to 425°F (220°C) to achieve the best crispiness.
  2. In a large bowl, combine the peeled and cut carrots with the trimmed green beans.
  3. Drizzle 3 tablespoons of olive oil over the vegetables and sprinkle with salt, black pepper, garlic powder, onion powder, and thyme.
  4. Toss the vegetables until they are evenly coated in the oil and seasonings.
Cooking
  1. Spread the vegetables in a single layer in the air fryer basket, making sure not to overcrowd for even roasting.
  2. Air fry for 20-25 minutes, stirring halfway through to promote even browning. The vegetables should be tender and golden brown when done.
  3. If desired, drizzle with balsamic vinegar in the last 5 minutes of cooking for added flavor.
  4. Once finished, let them cool slightly and, if you like, sprinkle with grated Parmesan cheese just before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, pop them back in the air fryer for about 5 minutes at 350°F (175°C) until they’re heated through and re-crispy. Avoid microwaving, as this can make them soggy.
