Method
 

  1. Preheat the air fryer to 350°F for 5 minutes.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.
  3. In a separate bowl, beat the eggs, then whisk in the milk, vanilla bean paste, and melted butter until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, whisking or stirring until a smooth, pourable batter forms with no dry pockets of flour.
  5. Lightly coat the air fryer basket with non-stick cooking spray.
  6. Use a small cookie scoop or tablespoon to drop rounded spoonfuls of batter into the basket, leaving space between each bite so they can puff and cook evenly.
  7. Air fry the bites at 350°F for 6 to 8 minutes, or until they are golden brown on the outside and set in the centers.
  8. Transfer the cooked funnel cake bites to a plate lined with paper towels or a cooling rack.
  9. Repeat with the remaining batter, spraying the basket lightly between batches as needed.
  10. While the bites are still warm, dust them generously with powdered sugar, then serve.
