Method
- Preheat the air fryer to 350°F for 5 minutes.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.
- In a separate bowl, whisk the eggs, then add the milk, vanilla bean paste, and melted butter and whisk until smooth.
- Pour the wet mixture into the dry mixture in 2 to 3 additions, whisking just until the batter is smooth and pourable with no dry streaks.
- Lightly coat the air fryer basket with non-stick cooking spray.
- Using a small cookie scoop or tablespoon, drop small mounds of batter into the basket, leaving a little space between each bite and working in a single layer.
- Air fry at 350°F for 5 to 7 minutes, or until the funnel cake bites are puffed and light golden on the edges.
- Transfer cooked bites to a wire rack or a plate lined with paper towels and repeat with the remaining batter, lightly spraying the basket between batches if needed.
- While the funnel cake bites are still warm, dust them generously with powdered sugar and serve immediately.
Notes
- Do not overcrowd the air fryer basket or the bites will cook unevenly and brown poorly.
- For make-ahead batter, refrigerate up to 24 hours, then let it sit at room temperature 10 to 15 minutes and whisk briefly before cooking.
- If the batter becomes very thin, whisk in a small pinch of baking powder before air frying.
- Reheat leftover bites in the air fryer at 320°F for 2 to 4 minutes; dust with fresh powdered sugar after reheating.
