Ingredients
Method
- Preheat the air fryer to 350°F for 5 minutes.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and whey protein isolate.
- In a second bowl, beat the eggs, then whisk in the milk, vanilla bean paste, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until the batter is smooth.
- Lightly spray the air fryer basket with non-stick cooking spray.
- Scoop the batter into 1 tablespoon mounds in the basket, spacing them apart; lightly spray the tops with cooking spray.
- Air fry for 7 minutes, flip the bites with tongs, then air fry for 4 minutes until golden and set.
- Transfer to a rack or a paper towel lined plate for 2 minutes, then dust with powdered sugar and serve warm.
Notes
- Cook in batches to avoid overcrowding so the bites stay crisp.
- Stir just until smooth to keep the inside tender.
- For a sugar free dusting, swap powdered sugar for powdered allulose or a monk fruit blend.
- Refrigerate batter up to 12 hours, whisk well before scooping, and expect slightly less rise.
