  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon melted butter
  • non-stick cooking spray
  • 2 tablespoons powdered sugar for dusting
  • 2 tablespoons whey protein isolate

Method
 

  1. Preheat the air fryer to 350°F for 5 minutes.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and whey protein isolate.
  3. In a second bowl, beat the eggs, then whisk in the milk, vanilla bean paste, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until the batter is smooth.
  5. Lightly spray the air fryer basket with non-stick cooking spray.
  6. Scoop the batter into 1 tablespoon mounds in the basket, spacing them apart; lightly spray the tops with cooking spray.
  7. Air fry for 7 minutes, flip the bites with tongs, then air fry for 4 minutes until golden and set.
  8. Transfer to a rack or a paper towel lined plate for 2 minutes, then dust with powdered sugar and serve warm.

Notes

- Cook in batches to avoid overcrowding so the bites stay crisp.
- Stir just until smooth to keep the inside tender.
- For a sugar free dusting, swap powdered sugar for powdered allulose or a monk fruit blend.
- Refrigerate batter up to 12 hours, whisk well before scooping, and expect slightly less rise.
