Ingredients
  

Vegetables
  • 2 cups Broccoli florets Substitute with cauliflower for a different flavor
  • 2 cups Carrots Use baby carrots for easier prep
  • 1 medium Red bell pepper Green bell pepper can be an alternative
  • 1 medium Zucchini Yellow squash can also be used
  • 1 medium Red onion Yellow onion can be used for a milder taste
  • 4 cloves Garlic (minced) Feel free to use garlic powder (1/4 teaspoon per clove)
Seasoning and Oil
  • 1/4 cup Olive oil Avocado oil can be substituted
  • 1 teaspoon Dried thyme Fresh thyme can be used (3-4 sprigs)
  • 1 teaspoon Dried rosemary Fresh rosemary can also be used (1-2 sprigs)
  • Salt and pepper Adjust to taste
  • 2 tablespoons Balsamic vinegar
  • 1/4 cup Parmesan cheese (grated) Omit for a vegan version

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C) while you prepare the vegetables.
  2. In a large bowl, combine the broccoli, carrots, red bell pepper, zucchini, red onion, and minced garlic.
  3. Drizzle the olive oil over the vegetables and sprinkle with thyme, rosemary, salt, and pepper. Toss everything well, ensuring the veggies are evenly coated.
Cooking
  1. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding, which can lead to uneven cooking.
  2. Cook for 15-20 minutes, shaking the basket halfway through to promote even browning. Look for the edges to turn golden and the vegetables to become tender yet crisp.
  3. Once done, remove the basket and drizzle the balsamic vinegar over the hot vegetables. Give them a final toss.
  4. Transfer to a serving dish, and if desired, sprinkle with grated parmesan cheese before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to four days. For best results, reheat them in the air fryer at 350°F (175°C) for about 5 minutes or until warmed through.
