Ingredients
  

For the Chicken
  • 1 lb chicken breast, sliced Use boneless chicken breasts for best results.
  • 1/4 cup soy sauce Low-sodium soy sauce can be used for a healthier option.
  • 2 tbsp honey Alternatively, use agave syrup for a vegan option.
  • 1 tbsp sesame oil Adds a nutty flavor.
  • 2 cloves garlic, minced Fresh garlic offers the best flavor.
  • 1 tbsp ginger, minced Fresh ginger is recommended.
For the Vegetables
  • 1 cup broccoli florets Cut into bite-sized pieces.
  • 1 medium red bell pepper, sliced Any color bell pepper can be used.
  • 2 stalks green onions, chopped For garnish.
  • to taste sesame seeds for garnish Adds nice texture.

Method
 

Preparation
  1. In a medium-sized bowl, combine soy sauce, honey, sesame oil, minced garlic, and minced ginger. Whisk until well mixed.
  2. Add the sliced chicken to the marinade, ensuring it's evenly coated. Allow it to sit for about 15 minutes.
  3. Preheat your air fryer to 375°F (190°C).
Cooking
  1. Arrange the marinated chicken in a single layer in the air fryer basket.
  2. Air fry the chicken for 8-10 minutes, flipping halfway through until browned and cooked through (internal temperature should reach 165°F / 75°C).
  3. While the chicken is cooking, heat a skillet over medium heat and stir-fry the broccoli and red bell pepper for about 3-4 minutes.
  4. Once the chicken is done, combine it with the stir-fried vegetables and serve hot. Garnish with chopped green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for about 5 minutes.
