  • 1 cup self-rising flour
  • 2 tablespoons vanilla whey protein powder
  • 4 tablespoons unsalted butter melted
  • 1/3 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar
  • 1 tablespoon milk or water

Method
 

  1. In a medium bowl stir together the Greek yogurt, self-rising flour, and whey protein powder until a soft dough forms.
  2. Turn the dough onto a lightly floured surface and knead for 1 to 2 minutes until smooth and not sticky.
  3. Roll the dough into a rectangle about 9 by 12 inches.
  4. In a small bowl mix the granulated sugar, cinnamon, and salt until evenly combined.
  5. Brush the entire dough surface with the melted butter.
  6. Sprinkle the cinnamon sugar mixture evenly over the buttered dough and gently press it in with your palms.
  7. Preheat the air fryer to 350°F.
  8. Using a sharp knife or pizza cutter, cut the dough lengthwise into 12 strips about 1 inch wide.
  9. Pick up each strip by the ends and twist several times to form a spiral, then place the twists seam side down on a plate or tray.
  10. Lightly spray or brush the air fryer basket with oil or a bit of melted butter, then arrange the twists in a single layer with space between them.
  11. Air fry at 350°F for 7 to 8 minutes, flipping halfway through, until puffed and deep golden.
  12. Transfer the twists to a wire rack to cool slightly.
  13. In a small bowl whisk together the powdered sugar with the milk or water until smooth.
  14. Drizzle the glaze over the warm cinnamon twists and serve.

Notes

- Work with a lightly floured surface and hands to keep the yogurt dough from sticking while you roll and twist.
- Cook the twists in batches if needed so they have room to crisp instead of steam.
- For extra protein, you can increase the whey protein powder to 3 tablespoons and reduce the self-rising flour slightly if the dough feels too soft.
- Let the twists cool for a few minutes before glazing so the drizzle sets instead of soaking in completely.
