Preparation
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil, and season generously with salt and pepper.
- Spread the potatoes in a single layer on the prepared sheet pan.
Roasting
- Roast the sweet potatoes for 15 minutes.
- While the potatoes roast, make the honey-garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a saucepan. Bring to a gentle simmer.
- Whisk in the cornstarch slurry and simmer until the sauce thickens, about 1 minute. Remove from heat.
- After 15 minutes, add the sausage and broccoli to the sheet pan. Drizzle half of the honey-garlic sauce over the ingredients and toss gently.
- Return the pan to the oven and roast for another 15–20 minutes, checking at 15 minutes for doneness.
Finishing
- Remove the pan from the oven, drizzle with the remaining sauce, toss again, and serve immediately.
Notes
This dish is versatile; feel free to swap in different vegetables or proteins. Use red pepper flakes for spice or serve with chopped parsley for added brightness. Store leftovers in an airtight container for up to 3–4 days.
