Ingredients
  

Wet Ingredients
  • 2 cups corn kernels (fresh or canned) Use well-drained canned corn if using canned.
  • 1 cup sour cream
  • 1/2 cup honey
  • 1/2 cup butter, melted
  • 2 large eggs
Dry Ingredients
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven or air fryer to 350°F (175°C).
  2. In a large bowl, combine the corn kernels, sour cream, honey, melted butter, and eggs. Stir until evenly blended.
  3. In a separate bowl, mix together the cornmeal, baking powder, salt, and black pepper.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until all the dry pockets are gone.
  5. Grease your casserole dish and pour the batter in, smoothing the top.
Baking
  1. Bake for 45–50 minutes until the top is golden and the center feels set.
  2. Let it cool for a few minutes before serving.

Notes

For best results, let the casserole rest before serving to allow it to firm up. If using canned corn, be sure to drain it well to avoid excess moisture.
