Ingredients
  

Potato Preparation
  • 2 large large potatoes, cubed Ensure uniform size for even cooking.
  • 1 tablespoon olive oil To coat potatoes.
  • to taste Salt and pepper For seasoning.
Meat and Toppings
  • 1 lb ground beef or turkey Choose ground meat of preference.
  • 1 packet taco seasoning For flavoring the meat.
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 medium avocado, diced Ripe for creamy texture.
  • 1 cup shredded cheese For topping.
  • to taste Sour cream, for serving
  • to taste Lettuce, for serving

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C) for optimal crispiness.
  2. Toss the cubed potatoes in a bowl with olive oil, salt, and pepper, making sure they are evenly coated. Spread them in a single layer in the air fryer basket.
Cooking Potatoes
  1. Air fry the potatoes for about 20 minutes, shaking the basket halfway through to ensure even cooking, until they are crisp and golden.
Cooking Meat
  1. While the potatoes are cooking, heat a skillet over medium heat and add the ground meat, cooking until browned. Drain any excess fat.
  2. Stir in the taco seasoning along with a splash of water, mixing well. Let it simmer for about 3-4 minutes until the flavors meld.
Assembly
  1. Once the potatoes are done, it’s time to assemble your bowls. Start with a base of roasted potatoes, followed by the seasoned meat, black beans, corn, diced tomatoes, and diced avocado.
  2. Sprinkle shredded cheese on top, and finish with a dollop of sour cream and a handful of lettuce. Serve immediately and enjoy!

Notes

Adjust cook time slightly if potatoes are larger or smaller. Feel free to spray a light coat of olive oil on the potatoes before cooking for extra crispiness.
