Preparation
- Preheat your air fryer to 400°F (200°C) for optimal crispiness.
- Toss the cubed potatoes in a bowl with olive oil, salt, and pepper, making sure they are evenly coated. Spread them in a single layer in the air fryer basket.
Cooking Potatoes
- Air fry the potatoes for about 20 minutes, shaking the basket halfway through to ensure even cooking, until they are crisp and golden.
Cooking Meat
- While the potatoes are cooking, heat a skillet over medium heat and add the ground meat, cooking until browned. Drain any excess fat.
- Stir in the taco seasoning along with a splash of water, mixing well. Let it simmer for about 3-4 minutes until the flavors meld.
Assembly
- Once the potatoes are done, it’s time to assemble your bowls. Start with a base of roasted potatoes, followed by the seasoned meat, black beans, corn, diced tomatoes, and diced avocado.
- Sprinkle shredded cheese on top, and finish with a dollop of sour cream and a handful of lettuce. Serve immediately and enjoy!
Notes
Adjust cook time slightly if potatoes are larger or smaller. Feel free to spray a light coat of olive oil on the potatoes before cooking for extra crispiness.
