Ingredients

For the skewers
  • 1 lb chicken breast, cut into cubes Evenly cut for uniform cooking.
  • 1 cup pineapple chunks With exposed cut sides for better caramelization.
  • 1/2 cup teriyaki sauce For marinating and flavor.
  • 1 bell pepper, cut into squares Adds savory balance.
  • 1 onion, cut into squares Also adds savory balance.
  • Skewers (wooden or metal) Soak wooden skewers for 30 minutes.
  • to taste salt and pepper Adjust according to taste.
  • to drizzle olive oil For browning and preventing dryness.

Method

Preparation
  1. Soak the wooden skewers in water for 30 minutes to prevent scorching.
  2. Marinate the chicken by adding the cubes to a bowl with teriyaki sauce and tossing until well coated. Let it marinate for at least 30 minutes.
  3. Preheat your air fryer to medium-high heat.
  4. Build the skewers by threading chicken, pineapple chunks, bell pepper, and onion onto the skewers in an alternating pattern.
  5. Drizzle the skewers with olive oil and season lightly with salt and pepper.
Cooking
  1. Cook the skewers in the air fryer for 10-15 minutes, turning occasionally until the chicken is cooked through and the pineapple has caramelized.
  2. Ensure the chicken is opaque in the center and there are caramelized edges on the pineapple.
Serving
  1. Serve the skewers hot while the pineapple is juicy and the teriyaki glaze is sticky-warm.

Notes

For even browning, turn the skewers halfway through cooking and don't overcrowd the air fryer. Store leftovers in an airtight container in the fridge.
