- Place 1 stick of string cheese on top of the halal beef sausage slices.
- Roll the tortilla up tightly around the filling, tucking in the sides slightly if needed, and place it seam side down.
- Repeat filling and rolling with the remaining tortillas, sauce, halal beef sausage slices, and string cheese to make 8 rolls.
- Lightly spray the air fryer basket with nonstick cooking spray.
- Preheat the air fryer to 375°F for 3 to 4 minutes.
- Brush the tops and sides of the assembled rolls with olive oil.
- Place 3 to 4 rolls in a single layer in the air fryer basket with space between each roll.
- Air fry at 375°F for 9 to 10 minutes, turning the rolls halfway through cooking if needed, until the tortillas are golden and crisp and the cheese is melted.

- Repeat cooking with any remaining uncooked rolls.
- Slice the rolls if desired and serve warm with ranch, marinara, or garlic butter for dipping.
Notes
- Make ahead by assembling rolls without oil, freezing on a parchment lined sheet until firm, then transferring to a freezer bag and cooking from frozen at 360°F for 10 to 12 minutes.
- Store leftover cooked rolls in an airtight container in the refrigerator for up to 3 days and reheat in the air fryer at 350°F for 3 to 5 minutes.
- Keep string cheese at room temperature before assembling so it melts evenly inside the rolls.
- Avoid overcrowding the air fryer basket so the rolls crisp evenly on all sides.
