Pretzel Bites

These pretzel bites have a classic pretzel-style exterior and a warm, tender interior, perfect for snacking or sharing.

Ingredients
  

Dough Ingredients
  • 1.5 cups warm water Should be around 110°F (43°C)
  • 2 tablespoons granulated sugar To bloom the yeast
  • 1 packet active dry yeast About 2 1/4 teaspoons
  • 4 cups all-purpose flour For the dough
  • 1 teaspoon salt To season the dough
Boiling and Topping
  • 1/4 cup baking soda For the boiling water bath
  • 1 large egg For the egg wash
  • Coarse sea salt For sprinkling on top

Method
 

Preparation
  1. In a large bowl, stir together the warm water and granulated sugar. Sprinkle the yeast over the top and let it stand for about 5 minutes, until foamy.
  2. Add the flour and salt to the bowl and mix until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  4. Place the dough in a bowl, cover, and let rise in a warm spot for 1 hour.
Baking
  1. Preheat the oven to 450°F (232°C).
  2. Bring a pot of water to a boil and carefully add the baking soda.
  3. Divide the dough and roll into small balls.
  4. Boil the dough balls in the baking soda water for about 30 seconds, then lift them out to drain.
  5. Beat the egg and brush it over the boiled dough balls. Sprinkle with coarse sea salt.
  6. Bake for 10–12 minutes until deeply golden brown and glossy.
Serving
  1. Serve warm, ideally right out of the oven.

Notes

These pretzel bites are best the day they are made. Store leftovers in the fridge and reheat before serving to restore some crispiness.
