  • 3 tablespoons milk of choice dairy or dairy-free
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 ounces hearty bread such as sourdough or day-old French bread cut into large bite-size cubes
  • Avocado oil spray or neutral cooking spray for greasing
  • Powdered sugar for serving
  • Additional maple syrup for serving
  • Fresh fruit such as berries or sliced banana for serving

Method
 

  1. In a large mixing bowl, whisk together the eggs, milk, maple syrup, and salt until smooth and well combined.
  2. Add the bread cubes to the bowl and gently fold until all pieces are coated in the egg mixture.
  3. Sprinkle the ground cinnamon over the coated bread cubes and gently toss again until the cinnamon is evenly distributed. Let the mixture sit for 1 minute so the bread absorbs the custard.
  4. Preheat the air fryer to 350°F for 5 minutes.
  5. Lightly grease the air fryer basket with avocado oil spray or line it with a piece of parchment paper cut to fit, leaving room for air circulation.
  6. Arrange the soaked bread cubes in a single layer in the air fryer basket, leaving a little space between pieces so air can circulate.
  7. Air fry at 350°F for 7 to 8 minutes, shaking the basket halfway through cooking, until the bites are golden brown on the outside and feel slightly firm but still soft in the center.
  8. Remove the French toast bites from the basket and serve immediately, dusted with powdered sugar and topped with maple syrup and fresh fruit.

Notes

- Use sturdy, slightly dried bread so the bites soak up the custard without getting soggy.
- Cut the bread into even cubes so they cook at the same rate and brown evenly.
- Do not overcrowd the air fryer basket; cook in batches if needed for best crispiness.
- Let leftovers cool completely before storing, then reheat in the air fryer at 320°F until re crisped.
