Preparation
- Preheat the air fryer to 400°F (204°C).
- Trim the ends of the asparagus and cut the carrots into even-sized pieces.
Mixing
- In a mixing bowl, toss the asparagus and carrots with olive oil, minced garlic, salt, and pepper until well-coated.
Cooking
- Spread the vegetables in a single layer in the air fryer basket.
- Air fry for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and lightly caramelized.
- If desired, sprinkle with fresh lemon juice and grated Parmesan cheese just before serving.
Notes
Store leftovers in an airtight container for up to three days. Reheat in the air fryer at 350°F (175°C) for about 5 minutes.
