Ingredients
  

Vegetables
  • 1 bunch asparagus (trimmed)
  • 3 large carrots (peeled and sliced into sticks)
Seasoning and Cooking
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (or rosemary)
  • ½ tsp paprika (optional)
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan cheese (optional) Add for extra richness.

Method
 

Preparation
  1. Trim the asparagus and cut the carrots into sticks to ensure even cooking.
Mixing
  1. In a large bowl, combine the asparagus, carrots, olive oil, garlic, salt, pepper, thyme, paprika, and lemon juice. Toss until well coated.
Cooking
  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. Place the seasoned vegetables in a single layer in the air fryer basket, avoiding overcrowding.
  3. Cook for 10 to 15 minutes, shaking the basket halfway through.
  4. If using Parmesan, sprinkle it over the vegetables in the last minute of cooking.
Serving
  1. Carefully remove the vegetables from the air fryer, season to taste, and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the air fryer at 350°F for about 5 minutes.
