  • 3 cups baby potatoes or creamer potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons grated parmesan cheese optional
  • 0.25 teaspoon dried rosemary or thyme optional
  • Oil spray or 1 teaspoon olive oil for brushing the air fryer basket

Method
 

  1. Wash and halve the baby potatoes and pat them completely dry with paper towels.
  2. Place the dried potato halves in a large mixing bowl.
  3. Drizzle the potatoes with 2 tablespoons of olive oil and toss until all pieces are evenly coated and glossy.
  4. Add the garlic powder, onion powder, smoked paprika, dried parsley, salt, and black pepper to the bowl. If using dried rosemary or thyme, add it now. Toss until the seasoning coats every potato evenly.
  5. Preheat the air fryer to 400 degrees Fahrenheit for 3 to 5 minutes.
  6. Lightly brush or spray the air fryer basket with oil to help prevent sticking.
  7. Arrange the seasoned potatoes in a single layer in the basket, cut sides facing down when possible, and avoid overcrowding.
  8. Air fry the potatoes at 400 degrees Fahrenheit for 10 minutes.
  9. Remove the basket and shake it well or use tongs to turn the potatoes so more sides face up and can brown.
  10. Return the basket to the air fryer and cook for another 8 to 12 minutes, until the potatoes are deep golden, crispy on the edges, and tender when pierced with a fork.
  11. Transfer the hot roasted potatoes back to the mixing bowl.
  12. Sprinkle with grated parmesan and a little extra dried or fresh parsley, if desired, and toss gently. Serve hot.

Notes

- For extra crispy potatoes, soak the halved potatoes in cold water for 10 minutes, then drain and dry them completely before seasoning.
- Lightly brushing or spraying the air fryer basket with oil helps prevent sticking and encourages browning.
- Arrange potatoes in a single layer and avoid stacking so hot air can circulate and crisp all sides.
- For extra crunch, increase the air fryer temperature to 415 degrees Fahrenheit for the last 2 minutes of cooking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 380 degrees Fahrenheit for 5 to 7 minutes until hot and crisp; avoid microwaving.
- To freeze, place cooled roasted potatoes in a freezer safe container and freeze for up to 1 month. Reheat directly from frozen in the air fryer until heated through and crispy.
- To make ahead, cut and season the potatoes up to 24 hours in advance and refrigerate, or air fry for 8 minutes, cool, refrigerate, and finish roasting right before serving.
