Preparation
- Cook the noodles according to the package directions. Drain well and set aside.
- Set a large skillet or wok over medium-high heat and add the vegetable oil.
Cooking
- Add the minced garlic and grated ginger to the hot oil. Stir constantly for about 30 seconds until fragrant.
- Add the shrimp and stir-fry for 3-4 minutes until they turn pink and opaque.
- Toss in the mixed vegetables and stir-fry for another 2-3 minutes until bright and tender.
- Add the drained noodles and soy sauce. Toss everything together for about 2 minutes.
- Season with salt and pepper to taste. Be careful with salt as soy sauce provides plenty.
Serving
- Serve hot, garnished with green onions for added freshness.
Notes
For best results, avoid crowding the pan to keep vegetables crisp. Drain noodles well before adding to the stir fry.
