Ingredients
  

For the Cornbread Poppers
  • 1 cup cornmeal Provides classic cornbread flavor.
  • 1 cup all-purpose flour Keeps the crumb from being too fragile.
  • 1/4 cup sugar Adds sweetness to the batter.
  • 1 tablespoon baking powder Important for the rise.
  • 1/2 teaspoon salt Enhances the flavors.
  • 1 cup milk Moistens the batter.
  • 1/4 cup vegetable oil Adds moisture and richness.
  • 2 large eggs Helps bind the ingredients.
  • 1/4 cup honey Sweetens the batter and aids browning.
For the Honey Butter
  • 1/2 cup butter (softened) Should be soft, not melted, for easy whipping.
  • 1/4 cup honey Mixes with butter to create a spread.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin well.
  2. In a large bowl, stir together cornmeal, flour, sugar, baking powder, and salt until evenly mixed.
  3. In another bowl, whisk together milk, vegetable oil, eggs, and honey until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined; the batter should be slightly lumpy.
  5. Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 12–15 minutes until golden brown and a toothpick inserted comes out clean.
  2. While baking, mix softened butter and honey in a small bowl until smooth.
  3. Remove the poppers from the oven and let them cool slightly.
Serving
  1. Serve warm, either with honey butter on the side or spread on top to melt.

Notes

For best results, avoid overmixing the batter. These poppers can be served as a snack or alongside dishes like chili or soup.
