Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cottage cheese, chopped spinach, flour, baking powder, and salt. Stir until the mixture starts to clump and form a rough dough.
- If the dough feels crumbly, add a small splash of water and mix until it holds together cleanly and feels soft, not wet.
- Divide the dough into equal portions and shape each portion into a bagel (a ring with a hole).
- Place the shaped bagels on parchment paper. If using an air fryer, ensure they are in a single layer.
- Brush the tops with the beaten egg to give them a golden finish.
Cooking
- Bake at 375°F (190°C) for 20-25 minutes until golden brown and set. If air frying, check for browned tops and firm edges.
- Let them cool for a few minutes before serving warm.
Notes
These bagels can be sliced and filled or enjoyed warm as is. Store cooled bagels in the fridge. For crispness, reheat in the air fryer.
